Bombo Italian Kitchen Arrives at the Seattle Convention Center

Bombo Italian Kitchen from restaurateur and chef Ethan Stowell has opened at the Seattle Convention Center in Washington.

Designed by Graham Baba Architects, the 4,200-square-foot restaurant features large bi-fold Douglas fir doors that open up to the center’s 9th Street plaza for an indoor-outdoor experience.

Inside Bombo Italian Kitchen

Entering the restaurant from the plaza, guests can peek down into the Bar at Bombo, located a half floor below. Further inside, a woodstone pizza oven stands against Mexican handcrafted terracotta tiles, rusticated white subway tiles, and blackened steel.

Beyond an open kitchen, natural white oak shelves and custom concrete aggregate countertops complement the wooden bar.

The Bar at Bombo

The entrance to the Bar at Bombo, which is divided into a lounge and a bar, is located downstairs. The lounge occupies the first half of the floor with a high-backed, sinuous leather banquette with movable tables and chairs to achieve the feel of a living room.

A custom smudge pot light fixture suspends from the lounge’s 26-foot-high ceiling. The fixture was modeled after the iconic rusted smudge pots, found throughout French and Italian vineyards, that are lit on cold nights to keep grapes from freezing.

A wall of fritted channel glass and solid cedar columns separates the lounge and bar.

In the bar area, a set of slatted wood panels float above the bar, which is brought together with custom steel shelves, smokey glass, and sparkling liquor bottles. The bar is faced with rotating, striated gray limestone, while solid walnut sits on the countertop.
